designer's own words:

the SOY ENGINE, drives to promote a healthy vegan lifestyle by serving to educate the public with the idea of green consumerism. TOFU, a common ingredient used in cooked Asian dishes is here promoted as a dessert. The overall experience of the visit to the site and tasting the tofu dessert is meant to offer the public an insight into contemporary vegan diet and culinary progress that many are unaware of. Moreover, it may inspire some to actually consider adopting a vegan diet from this juncture.

The process of tofu-making is chiefly an interactive way of learning how food is processed for the purpose of green objectives by engaging people of all ages. The machinery involved in the food making process enhance the overall architectural expression of the building, asserting itself as somewhat an ‘engine for change’.
