takehiro kishimoto hand-carves intricate patterns into fruit and vegetables

japanese chef and food artist takehiro kishimoto transforms everyday fruit and vegetables into edible masterpieces. previously published on designboom, the instagrammer, who goes by the handle @gakugakugakugakugaku1, uses an x-acto knife to carve intricate patterns into apples, courgettes, eggs and avocados.

takehiro kishimoto‘s elaborate designs are inspired by traditional japanese motifs. he combines the centuries-old art of thai fruit carving with the japanese art of mukimono. thai fruit carving was originally used only to decorate the tables of the royal family and the japanese art of mukim includes carving images into skins of fruit and vegetables.

the patterns often take the form flowers, twists, fan shapes or a mixture of both. traditionally they are served as a garnish on the same plate as the meal or on a side plate.

in order to combat the rapid oxidisation, depending on each fruit or vegetable, some creations must be made within several minutes. for others, kishimoto who says it can take up to an hour for broccoli and up to two hours for an avocado. asked what he does with the creations after finishing them mr kishimoto said: ‘I carve and eat it’, reports atlasobscura.
