multidisciplinary creative agency NCBHAM, specialized in design, branding, and food experience, has worked on the conception of the second outlet of ‘dam sum’ dumplings restaurant in brussels, belgium. situated in the area of ‘quai au bois à bruler’, which was once the fish market of the city, the project uses the context and the history of the region as a core axis for its concept and design.

going all the way back to the dim sums’ country of origin, NCBHAM has drawn inspiration and references from the shanghai fish market stalls, in order to create a unique restaurant environment. the materiality reflects the resourcefulness developed by the traders with ephemeral structures and juxtaposed wall decorations. the salvaged baskets, the metallic and translucent corrugated sheets, the indirect lighting and the concrete walls transport visitors to a fictional chinese environment, strongly anchored to both traditional and urban context.
